Red Pepper Marinara.

I wanted to find a marinara recipe that made a mild tomato sauce with good basil flavor. It took about four tries to create the sauce. It turns out the key was red bellpeppers and honey. Here's the recipe.

Ingredients
2 T Olive oil
2 sweet red or yellow bell peppers
4 cloves minced garlic
1 large onion, chopped
3-14.5 oz. cans stewed tomatoes
2 T basil
2-3 slices American cheese, to taste (optional)
honey (to taste, I used about 2 T)

Heat olive oil on medium-high heat. Add garlic, onion, and saute until soft. Add stewed tomatoes and basil and heat on stove. Remove pot from heat, and puree mixture with an immersian blender (or with potato masher). Add honey to taste (I use 2 T). If desired, add sliced cheese.

This sauce is very good with angelhair pasta, in lasagna, or on panini sandwiches.
